SPICY PRAWN CURRY

Ingredients

  • 500g prawns, peeled and deveined
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 2 green chilies
  • Turmeric powder 1teaspoon
  • Handful of fresh coriander leaves
  • 2 tablespoons oil
  • Salt to taste
  • Garnish with fresh coriander leaves. 
  • Serve hot with steamed rice or naan bread.

For the Masala Paste:
  • 4 cardamom pods
  • 4 cloves
  • 1-inch cinnamon stick
  • 1 teaspoon black pepper
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 tablespoon coriander seeds
  • 4 garlic cloves
  • 1-inch piece of ginger
  • 1 onion, roughly chopped
  • 2 green chilies
Handful of fresh coriander leaves

Masala Paste for Thickening the Gravy:
  • 4 almonds, 
  • 1 teaspoon poppy seeds, 
  • 1 teaspoon sesame seeds, 
  • Handful of fresh coriander

Instructions:

Prepare the Masala Paste:
In a dry skillet, add 1 teaspoon oil roast cardamom pods, cloves, cinnamon stick, black pepper, cumin seeds, fennel seeds, coriander seeds, onion, green chilly until fragrant. Allow them to cool. In a blender, combine the roasted spices with garlic cloves, ginger, and fresh coriander leaves. Blend into a smooth paste and set aside.



Prepare the Masala Paste:
Dry roast almonds, poppy seeds, and sesame seeds until lightly golden.
 Allow them to cool.
In a blender or food processor, combine the roasted almonds, poppy seeds, sesame seeds, and fresh coriander leaves.
Blend into a smooth paste.
 If needed, add a splash of water to help with the blending process.
This masala paste will add richness and thickness to your gravy, enhancing the flavor and texture of your Spicy Prawn Curry.


Cooking curry
Heat oil in a pan over medium heat. 
Add chopped onions, green chilies, and curry leaves. Sauté until golden brown.
add tomatoes cook well
Add masala paste Sauté for a minute until fragrant and cook until the oil starts to separate from the mixture.

Add the prawns and cook for 5-10 minutes until it is cooked thoroughly. Add gravy masala and mix well If the gravy is too thick, add half a cup of water and simmer until desired consistency is reached.
Season with salt to taste.



Garnish with fresh coriander leaves. Serve hot with steamed rice or naan bread.
