Ingredients:
- 500g prawns, cleaned and deveined
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon garam masala
- 1/2 cup chopped fresh mint leaves
- 1/2 cup chopped fresh coriander leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 3 tablespoons cooking oil 

Instructions:

1.Marinate the Prawns:
   - In a bowl, mix the prawns with half a teaspoon of turmeric powder, half a teaspoon of red chili powder, and a little salt. Set aside for 15-20 minutes.

2. Heat Oi:
   - In a large skillet or pan, heat the cooking oil over medium heat.

3. Sauté Onions:
   - Add the chopped onions to the hot oil and sauté until they turn golden brown.

4. Add Ginger-Garlic Paste:
   - Add the ginger-garlic paste to the onions. Sauté for a minute until the raw smell disappears.

5. Add Tomatoes and Green Chilies:
   - Add the chopped tomatoes and slit green chilies. Cook until the tomatoes are soft and the mixture starts to release oil.

6. Spices:
   - Now, add the remaining turmeric powder, red chili powder (adjust to your spice preference), and garam masala. Mix well and cook for another minute.

7. Cook the Prawns:
   - Add the marinated prawns to the pan. Stir gently to coat the prawns with the masala.

8. Simmer:
   - Lower the heat, cover the pan, and let the prawns cook in the masala for 5-7 minutes until they are cooked through. Stir occasionally to prevent sticking.

9. Check Seasoning:
   - Taste the masala and adjust salt or spice levels if needed.

10. Add Fresh Herbs:
    - Once the prawns are cooked, add chopped mint leaves and coriander leaves. Mix well.
